Microwave Mug Omelette

Ingredients:
• 1 tsp salted butter
• 1 tsp shallot, chopped
• 2 eggs
• 1 tbsp parsley, finely chopped
• 1 tbsp red pepper, finely diced
• 1 tbsp chives, chopped
• 1 tbsp cheddar, grated
Instructions:
1. Prepare mug: Place butter and chopped shallots into a microwaveable mug. Cook in the microwave for 30 seconds, then remove and stir. Let the mug cool slightly, then swirl the butter and shallot around to coat the sides.
2. Mix eggs: In a bowl, beat the eggs and add parsley, red pepper, chives, and cheddar. Season with salt and pepper as desired.
3. Cook omelette: Pour the egg mixture into the mug. Microwave for 20 seconds, then stir the eggs. Repeat this process—cooking for 20 seconds, stirring—two more times.
4. Finish: After the final cook, let the mug stand for 1 minute. If the omelette isn’t set enough, cook for another 20 seconds.
