  • Arugula Walnut Pesto

    Servings: 2 cups

    Ingredients:

    • 1 1/3 cup walnuts, toasted

    • 5 oz baby arugula

    • 1 1/2 cup extra-virgin olive oil

    • 2 tablespoon (about 6 cloves) chopped garlic

    • 3 tablespoon grated Parmigiano cheese

    • 3 tablespoon lemon juice

    • 1 ½ teaspoon salt

    Instructions:

    1. In a food processor fitted with the metal blade, combine all of the ingredients and process for 1 to 2 minutes, stopping once or twice to scrape down the sides of the bowl, until the pesto is smooth. Set aside.
